Ingredients
  

  • 3 eggs
  • 1 tablespoon olive oil
  • ¼ cup psyllium husk
  • ¼ cup cottage cheese
  • 1 teaspoon vinegar, distilled white or apple cider vinegar
  • 1 teaspoon toasted sesame
  • 1 teaspoon black sesame seeds
  • 1 teaspoon baking powder
  • ½ teaspoon sugar or natural sweetener, such as monk fruit sugar
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon sumac , optional
  • ½ teaspoon garlic powder , optional
  • ½ teaspoon Zaatar blend , optional

Instructions
 

  • Dump all the ingredients in the container of a food processor and run the machine until all the ingredients are well combined. Transfer the mixture to a mixing bowl and let it rest for no less than 20 minutes. The dough will thicken, will come together and will become pliable. Shape the bread into rolls or buns.
  • Preheat the oven to 180 ° C (370 ° F) and bake the bread for no longer than 15 minutes.
  • Serve the bread warm with eggs, and/or a platter of cold cuts and keto dips.
  • Store the bread in the fridge in ziplocks or airtight containers. You can freeze the bread for up to two weeks.

Nermine's Notes

  • Let the dough rest for at least 20 minutes, so it thickens and you can shape it.
  • Oil your hands to be able to shape the sticky dough.
  • Don't open the oven door before the bread is fully baked, or it will significantly deflate.
