Keto Zaatar Bread is the ultimate fashion to satiate your bread cravings midst your pursuit of weigh loss. It is jam packed with protein, fiber, and antioxidants, and makes excellent sandwiches bread.

Keto diet has become a lifestyle of mine for almost a year now. Since I have been on a Keto diet, my body reaped wonderful results that went beyond weight loss. In many ways, Keto has also improved my overall wellbeing and lessened my joints pain.

Admittedly, both my complexion and sleep have also improved tremendously since my pursuit of this low carb diet.

The only struggle I faced was to find a flavorful flourless bread that I can actually eat and enjoy its flavor as well as its texture. To much of my delight, Dr. Sandra Makari, an Egyptian nutritionist and food figure in Egypt, has recently shared her recipe of flourless Keto bread that is made of Psyllium husk.

I applied Makari’s recipe as is at first, yet I figured I can easily jazz it up with some simple Middle eastern staples that I already have in my pantry such as Zaatar blend, sesame seeds, and nigella seeds.

The recipe of “Keto Zaatar Bread” 

This flourless Keto bread can’t be easier or more straight forward. No kneading is required in this bread recipe. Actually, a food processor is all you need. Check this step-by-step video for visual directions.

Make the dough

Dump all the ingredients in the container of the food processor and run it for a minute, until all the ingredients are perfectly combined and a liquid dough forms.

While the dough is still liquid, transfer it to a mixing bowl and let it rest for 20-30 minutes until it thickens.

Shape the dough of Keto Zaatar bread 

Once the dough thickens, rub your hands with some olive oil and start forming the bread into the shape you want, such as rolls, buns or flatbread. Lay them on a baking sheet lined with parchment paper.

Bake Keto Zaatar Bread 

Preheat the oven to 180 °C or 370 °F and place the bread in for 10-15 minutes. Please turn on the oven light instead of opening the oven door to check on the bread while it bakes, because if you do so, the bread will immediately deflate.

The leavening agent in this bread is baking powder and not yeast, so treat this bread as you treat a cake and let it bake undisturbed in the oven until it is fully baked, puffy, and ready to leave the oven.

Serve Keto Zaatar Bread in Style 

Use this bread as sandwich bread or even better, create a Keto feast using Egyptian scrumptious Baid Meza’lil (boiled and fried eggs), baba Janoush (eggplant tahini dip), Gebena Karish bel Tamatam (Egyptian spicy white cheese with tomatoes), or any keto dip of your choice

Store Keto Bread 

Given that this bread contains eggs, I don’t recommend leaving it at room temperature, outside the fridge.  Store this bread in ziplocks in the fridge or freezer and reheat it before you serve it.

This bread is loaded with nutrients such as:

  • Eggs

Eggs are an excellent good source of nutrients. According to Australian Eggs website, “an average serving of 2 eggs contains:

  • 82% of your daily vitamin D requirements
  • 50% of your daily folate requirements
  • 25% of your daily riboflavin (Vitamin B2) requirements
  • 40% of your daily selenium requirements
  • Psyllium husk

Psyllium husk is a fiber in form of powder. It regulates blood sugar and cholesterol, cleans the intestine and colon, relieves from constipation as well as diarrhea, and suppresses the appetite which leads to weight loss.

  • Zaatar Blend 

Zaatar Blend is packed with antioxidants such as Sumac, thyme, and oregano. It is believed that Zaatar Blend treats inflammation, improves cognitive, and is a good energy booster. You can read more about its benefits on The Spice People website. 

  • Cottage Cheese 

According to Medical News Today: “Cottage cheese is an excellent source of calcium, a mineral that plays a major role in tooth and bone health, and in the prevention of osteoporosis.”

  • Olive Oil

Success Tips

  • Let the dough rest for at least 20 minutes, so it thickens and you can shape it.
  • Oil your hands to be able to shape the sticky dough.
  • Don’t open the oven door before the bread is fully baked, or it will miserably deflate.

INGREDIENTS 

Makes 3-4 small rolls or buns 

  • 3 eggs 
  • 1 tablespoon olive oil 
  •  1/4 cup psyllium husk 
  • 1/4 cup cottage cheese 
  •  1 teaspoon vinegar (distilled white or apple cider vinegar) 
  • 1 teaspoon toasted sesame 
  •  1 teaspoon black sesame seeds 
  • 1 teaspoon baking powder 
  • 1/2 teaspoon natural sweetener (such as monk fruit sugar)
  •  1/2 teaspoon salt 
  • 1/2 teaspoon black pepper

DIRECTIONS 

  • Dump all the ingredients in the container of a food processor and run the machine until all the ingredients are well combined. Transfer the mixture to a mixing bowl and let it rest for no less than 20 minutes. The dough will thicken, will come together and will become pliable. Shape the bread into rolls or buns. 
  • Preheat the oven to 180 ° C (370 ° F) and bake the bread for no longer than 15 minutes. 
  • Serve the bread warm with eggs, and/or a platter of cold cuts and keto dips.
  • Store the bread in the fridge in ziplocks or airtight containers. You can freeze the bread for up to two weeks.
