Easy spicy chicken phyllo pie is a quick and easy dish that is loaded with flavors, and perfect to serve on a weekday or weekend during busy summer time.
- Phyllo Sheets: These thin layers of dough are made of flour, water, a small amount of oil, and maybe a pinch of salt. They are layered with butter in between to create a crispy, flaky texture when baked. You should thaw the phyllo in the fridge, and it must be covered with a damp cloth; otherwise, it dries out quickly and cracks into brittles.
- Ground Chicken: Ground chicken is a versatile protein with a mild flavor and a soft, tender texture. Yet, there can be a slight natural sweetness to the meat, especially if it includes dark meat portions. Compared to other ground meats like beef or pork, ground chicken is typically leaner, leading to a lighter taste. Because of its mild flavor, ground chicken benefits from bold seasonings. You can buy ground chicken from your grocery store or make yours using a meat grinder or a food processor.

- Baharat (Egyptian Spice Blend): Baharat is a traditional Egyptian spice blend known for its warm, aromatic, and slightly sweet flavor profile. The name “Baharat” actually means “spices” in Arabic, and it typically includes a mixture of common ingredients: black pepper, cumin, coriander, cinnamon, cloves, cardamom, nutmeg, and paprika.

- Cooking fat: You can use any fat you prefer. Personally, I find olive oil and butter combined or ghee is the best cooking fat for any Egyptian dish.
How to Make Easy Spicy Chicken Phyllo Pie
This succulent pie comes together in no time if you prepare the chicken stuffing ahead of time. The steps below will explain how to make the best Chicken Phyllo Pie.
Step 1: Make the Chicken Stuffing
In a large frying pan, add the butter and oil or ghee over medium-low heat. Once warm, add the onions and sauté for 3-5 minutes. Toss in the minced garlic then add the ground chicken, salt and pepper, and the spices. Keep stringing the ground chicken around until it darkens in color and absorbs all its water. Turn off the heat once the chicken juice dries out.

Step 2: Prep the Phyllo
It is best to thaw the phyllo dough in the fridge overnight. While ruling the phyllo sheets, keep the rest of the sheets covered with a damp cloth so they don’t dry out. Melt some butter and have your pastry brush handy.
Step 3: Roll the Phyllo
Brush a sheet of phyllo with melted butter, and then lay another one on top. Add the stuffing towards the longer end of the sheet and roll tightly. Lay, seam side down, along the edge of the pan. Continue to wrap the filling and place the coils into the pan, starting each cylinder where the last one ends until the pan is full.
Step 4: Bake
Melt the remaining 3 tablespoons of butter in the same bowl. Evenly drizzle or brush the butter all over the rolls. Sprinkle with sesame seeds if desired. Bake for 48-56 minutes or until golden and crispy.

Recipe Variations
In lieu of chicken stuffing, you can swap in a variety of fillings, such as ground meat, feta cheese, or a mixture of feta and spinach, just to name a few.

- Preheat the oven to 400°F.
- Cook the chicken. Heat the oil and butter (or ghee) in a heavy skillet. Once hot, add the sliced onions and stir slowly over medium-low heat until the onions caramelize. Add the garlic and stir for one minute. Add the chicken and the spices, and continue cooking on low heat. When it is fully cooked, let it come to room temperature.
- Melt the butter on low heat.
- Brush the baking round pan with enough butter.
- Take a sheet of phyllo and place it on your work surface horizontally (with the long edge closer to you). Brush lightly with butter and place another sheet on top. Place a thin line of the filling down the length of the phyllo. Fold the bottom/long edge over and carefully roll it up into a cylinder. Lay, seam side down, along the edge of the pan. Continue to wrap the filling and place the coils into the pan, starting each cylinder where the last one ends until the pan is full.
- Brush the surface of the pie with olive oil and bake for 48-56 minutes until golden and crispy.
- Serve hot.
NOTES
- Always keep the phyllo sheets covered with a damp towel while working so they don’t dry out.
- The best-tasting ground chicken for this dish is a combo of dark and white chicken meat.
