What are Keto-Zaatar Seeds Crackers? 

Seeds crackers are a type of nutritious snack made primarily from various seeds and other wholesome ingredients. They are typically gluten-free, low in carbohydrates, and high in fiber, making them a popular choice for health-conscious individuals, particularly those following low-carb, keto, or gluten-free diets. I never thought that anything could replace a piece of hot pita when I nibble on a bowl of tahini dip or labneh, yet these seeds crackers proved me wrong. I came to learn about those snacks from Nesrine, my lovely Egyptian neighbor in Singapore. Yes, my next-door neighbor in Singapore was a lovely Egyptian lady. What are the odds?

Nesrine, my friend, is a health-conscious person who had a no-fail recipe for those crackers, which she generously shared with me. I have been making those crackers over the last 4 years, and each time, I like to tweak it a bit. So far, my favorite variation is the one spiked with a fragrant Zaatar blend.

Health Benefits of Zaatar Seeds Crackers  

  • High in Fiber: Seeds are an excellent source of dietary fiber.
  • Rich in Healthy Fats: They contain beneficial fats, including omega-3 fatty acids.
  • Protein-Rich: Seeds provide a good amount of plant-based protein.
  • Micronutrients: Seeds are rich in vitamins and minerals like magnesium, zinc, and B vitamins.

How to Make Zaatar Seeds Crackers 

This recipe is straightforward and doesn’t need advanced or special culinary skills. If you can crack an egg, then you can perfectly make these crackers. You can watch it step by step here.
  • 1 cup almond flour
  • 1/3 cup chia seeds
  • 1 cup white sesame
  • 1/2 cup sunflower seeds
  • 1 cup pumpkin seeds
  • 1 tablespoon Zaatar blend 
  • 1/2 teaspoon Himalayan salt
  • 3-4 cups to 1 cup warm water
DIRECTIONS
  1. Mix all the ingredients except the water in a deep bowl.
  2. Pour warm water over the seeds mixture and stir until everything is well combined. Set it aside for 30 minutes.
  3. Spread the seeds mixture on a baking sheet (30 cm X 44.5 cm) or (12” x 17”), and with a cookie cutter, draw small rectangles as you see in the video.
  4. Bake at 180°C or 360° F for 20 minutes.
  5. Let the crackers come to room temperature. Break them into pieces and store them in airtight containers.

Freezing and Make Ahead 

You can make those crackers and freeze them ahead. Follow the below instructions for proper freezing.
  1. Cool Completely: Allow the crackers to cool completely after baking to prevent condensation.
  2. Single Layer Freezing: Arrange the crackers in a single layer on a baking sheet to freeze individually for a few hours. This prevents them from sticking together.
  3. Storage: Transfer the frozen crackers to an airtight container or a freezer-safe bag. You can separate layers with parchment paper to maintain their shape and texture.
  4. Labeling: Label the container or bag with the date to keep track of how long they have been stored.
  5. Thawing: Let the crackers thaw at room temperature.
  6. Reheating: If they lose some of their crispiness, you can refresh them by baking them in a preheated oven at a low temperature (around 300°F or 150°C) for a few minutes until they are crisp again.

Tips

  • Ensure the crackers are thoroughly dried before freezing to maintain their texture.
  • Consume within 2-3 months for the best flavor and texture.
