Traditionally shaved from a vertical rotisserie, this homemade skillet version delivers the same bold, smoky flavors and tender texture, making it easy to recreate an authentic Egyptian favorite in your own kitchen.

Beef shawarma is traditionally made with thinly sliced cuts of beef, a fragrant blend of warm spices, and a tangy yogurt-based marinade that tenderizes the meat while infusing it with flavor. While the recipe below follows a classic Egyptian approach, it’s easy to adapt based on what you have on hand.

  • Beef: Flank steak and top round are excellent choices. Sirloin, flat iron, or ribeye also work well; just be sure to slice the meat thinly against the grain for maximum tenderness.
  • Lamb Fat: Traditionally, shawarma is cooked with rendered lamb tail fat (liyeh), which adds its signature richness and aroma. If unavailable, substitute beef tallow or a neutral oil such as avocado or canola oil.
  • Yogurt: Whole-milk plain yogurt produces the richest marinade, but low-fat plain yogurt can also be used.
  • Vinegar: Red wine vinegar adds subtle depth, though distilled white vinegar or apple cider vinegar are good alternatives.
  • Lime Juice: Freshly squeezed lime juice is preferred, but lemon juice works just as well.
  • Shawarma Spice Blend: Homemade delivers the freshest flavor, but a good-quality store-bought shawarma seasoning can save time.
  • Tahini Sauce: For a lighter sauce, replace part of the tahini with additional yogurt. If you prefer a richer, more traditional sauce, omit the yogurt and thin the tahini with water and lemon juice.

Ingredients
  

Shawarma Marinade

  • 5 green cardamom pods
  • 1 tablespoon black peppercorns
  • tablespoons allspice berries
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon sweet paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground sumac
  • 1 teaspoon ground turmeric
  • 1 teaspoon Aleppo pepper or red pepper flakes
  • ½ teaspoon ground cinnamon
  • * 1 medium yellow onion, quartered
  • * 1 cup whole-milk plain yogurt
  • * 2 tablespoons red wine vinegar or white vinegar
  • * 2 tablespoons freshly squeezed lime juice
  • * 1/4 cup extra-virgin olive oil
  • * 4 garlic cloves, minced
  • * 2 tablespoons shawarma spice blend
  • * 2 teaspoons kosher salt
  • * 2 1/4 pounds flank steak or top round, sliced across the grain into thin strips

Tahini Sauce

  • 1 cup 1 cup tahini
  • ½ cup plain yogurt
  • 2 tablespoons lime juice
  • Salt and freshly ground black pepper
  • Warm water, as needed

For Cooking Shawarma

  • 35 g lamb fat, liyeh, beef tallow, or 2 tablespoons neutral oil
  • 1 Roma tomato, diced
  • 1 medium red onion, diced
  • ¼ cup chopped parsley
  • * 1 charcoal briquette, optional for a smoky finish

For Serving

  • Pita, shrak, or lavash bread
  • Tahini sauce
  • Harissa
  • Pickled cucumbers
  • Pickled turnips
  • French fries

Instructions
 

Prepare the Shawarma Spice Blend

  • Remove the seeds from the cardamom pods. Toast the cardamom seeds, black peppercorns, allspice, cumin, and coriander in a dry skillet over medium heat for about 1 minute, just until fragrant. Allow the spices to cool, then grind them together with the paprika, garlic powder, onion powder, oregano, sumac, turmeric, Aleppo pepper, and cinnamon until finely ground. Store any extra spice blend in an airtight jar.

Marinate the Beef

  • Blend the onion until completely smooth, then strain it through a fine sieve to extract the juice, pressing firmly with the back of a spoon. Discard the pulp.
  • In a large bowl, whisk together the onion juice, yogurt, vinegar, lime juice, olive oil, garlic, shawarma spice blend, and salt. Add the sliced beef and toss until every piece is well coated. Cover and refrigerate for at least 3 hours, or overnight for even deeper flavor.

Prepare the Tahini Sauce

  • Whisk together the tahini, yogurt, and lime juice. Season with salt and pepper, then gradually whisk in warm water until the sauce is creamy enough to drizzle but still thick enough to spread.

Cook the Beef Shawarma

  • Remove the beef from the refrigerator about 20 minutes before cooking.
  • Heat the lamb fat in a large cast-iron skillet over medium-high heat. Working in batches, cook the beef without overcrowding the pan, allowing it to brown well before stirring. Continue cooking until the meat develops caramelized edges and is just cooked through.
  • Return all the beef to the skillet. Add the diced tomato and red onion and cook for another 2 minutes, just until they soften slightly while still retaining their texture. Stir in the chopped parsley and taste for seasoning.

Optional Charcoal Finish

  • For the distinctive aroma of traditional street-side shawarma, place a small heatproof bowl in the center of the skillet. Heat a charcoal briquette until glowing, transfer it to the bowl, and drizzle it with the oil. Immediately cover the skillet tightly and let the smoke infuse the meat for 10 to 15 minutes before serving.

Assemble

  • Warm the bread until soft and pliable. Spread with tahini sauce and a little harissa, if desired. Add a generous portion of shawarma, then top with pickled cucumbers, pickled turnips, and fries for an authentic Egyptian-style sandwich. Roll tightly and serve immediately.

  1. Onion juice naturally tenderizes the beef while adding sweetness without leaving visible pieces of onion in the marinade.
  2. Lamb fat gives the shawarma its unmistakable flavor, but beef tallow or neutral oil are excellent substitutes
  3. Leftover shawarma keeps well in the refrigerator for up to 3 days and reheats beautifully in a hot skillet.
