There are some cookbooks you open and immediately want to cook your way through from beginning to end. The Book of Egypt was one of them, and I feel especially honored to have contributed two recipes to its pages: the beloved Egyptian Fatta and our family’s signature Feteer Al Malak. Written by the wonderfully talented Suzanne Zeidy and Rasha Badrawi—an adept cookbook author, and a seasoned travel writer who has spent years exploring the immense food landscape in Egypt. Please note I slightly tweaked the recipe to my family preference (see the “Substitutions” section) .

This gorgeous book is a love letter to the country’s extraordinary culinary landscape, taking us from the Mediterranean and North Coast to the Nile Valley and the mountains, through recipes that tell the story of place, people, and tradition. I was honestly torn about which recipe to make first, so I chose one I knew would have my family gathered around the table: their Dukkah-Rubbed Chicken. The chicken emerges beautifully juicy and moist, wrapped in a fragrant, nutty dukkah crust that adds incredible texture and depth to every bite. It is simple, generous, deeply Egyptian, and exactly the kind of dish that reminds me why our food is meant to be shared.
Dukkah Chicken Roast’s Ingredients & Substitutions
The ingredients here are easy to find yet I offered below this photo some substitutions that you can swap in and I successfully tried in my kitchen.

- Honey instead of brown sugar: Replace the brown sugar with honey for a naturally sweet marinade with a beautiful caramelized finish.
- Lemon instead of orange: Use lemon zest and slices in place of orange for a brighter, more citrusy flavor with a little extra tang.
- Add walnuts: Add a handful of finely chopped walnuts to the dukkah mixture for extra crunch, richness, and a delicious nutty depth.
- Spatchcock the chicken: For faster, more even cooking, spatchcock the chicken by removing the backbone and flattening it before roasting. This helps the chicken cook more quickly and evenly, while keeping the breast meat especially tender and moist.
How to Make Dukkah Chicken Roast


Egyptian Dukkah Chicken Roast Recipe
Ingredients
- whole chicken, ,spatchcocked
- 1 orange
- 1 yellow onion, peeled, quartered
- 1 garlic bulb, halved
- 100ml/ ½ cup orange juice
- 50ml/31/2 tablespoons olive oil
- sea salt and fresh ground pepper
- Thyme or dill to garnish
FOR THE DUKKAH MARINADE
- 1 tablespoon fennel seeds
- 1 tablespoon coriander seeds
- 2 tablespoons brown sugar, or honey
- 2 tablespoons sesame seeds
- Zest of 1 orange
- 50ml/ 31/2 tablespoons olive oil
- 2 teaspoons Dijon mustard
- Sea salt , to taste
FOR THE ROASTING VEGETABLES
- 1½ lb 680 g baby potatoes, halved
- 2 medium sweet potatoes, peeled and cut into chunks
- 1 tablespoon olive oil
- ½ teaspoon ground cumin
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Pat the spatchcocked chicken thoroughly dry with paper towels. Place it skin-side up on a large baking sheet or roasting pan.
- In a small bowl mix together the sugar, salt, sesame seeds and orange zest. Add the ground fennel and coriander seeds and stir with a spoon until well combined. Add the mustard and olive oil and stir to create a paste.
- Rub the marinade generously all over the chicken, including underneath the skin where possible.
- Place the marinated chicken in the refrigerator uncovered for at least 4 hours, preferably overnight. The cool, dry air helps remove excess moisture from the skin, which encourages beautifully crisp skin during roasting.
- When ready to roast, remove the chicken from the refrigerator and let it sit at room temperature for about 20–30 minutes.
- Preheat the oven to 400°F (200°C).
- Meanwhile, Arrange the potatoes and sweet potatoes in a roasting pan, toss them with olive oil, salt, cumin, and black pepper. Slice the orange into 1cm in thick slices. Tuck the orange slices, garlic bulb, and the onion quarters among the vegetables. Pour the orange juice and olive oil over the vegetables. Place the chicken on top of the vegetables, leaving the chicken skin-side up. Cover the roasting dish with parchment paper and foil.
- Roast the chicken and vegetables for approximately 30 minutes, remove the cover and then roast fora noter 30 to 45 minutes depending on the size of the chicken. Rotate the pan halfway through cooking, baste the chicken with the pan juices and toss the vegetables if needed for even browning.
- The chicken is done when the juices run clean from thickest part.
- Remove the chicken from the oven and let it rest for 10–15 minutes before carving. This allows the juices to redistribute and keeps the meat tender.
- Serve the chicken surrounded by the roasted potatoes and sweet potatoes. Garnish with lemon wedges and some dill or thyme.

Tips to Make the Best Dukkah Chicken Roast
- Choose quality chicken: For the best flavor and texture, choose organic, pasture-raised chicken whenever possible. Look for chicken raised without added hormones or antibiotics
- Spatchcock the chicken: Removing the backbone and flattening the chicken helps it cook faster and more evenly, keeping the breast tender and juicy.
- Dry toast the spices first: a quick dry toast in a stainless steel pan will powerfully unlock the fragrance and depth of flavor of the whole spices before grinding them.
- Grind the spices coarsely: A rough grind of fennel and coriander releases their fragrant oils while keeping the dukkah pleasantly textured.
- Uncover the chicken in the fridge: While it sits in the marinade in the fridge don’t cover the chicken as the chill will dry out ht moisture in the chicken’s skin which renders a crispy skin during roasting.
- Roast with aromatics: Surround the chicken with potatoes, sweet potatoes, onion, garlic, and orange or lemon slices so they caramelize in all those delicious pan juices.
- Let it rest: Rest the chicken for 10–15 minutes before carving so the juices redistribute and the meat stays wonderfully moist.
